ABOUT ME:
My name is Richard Knox. I am currently a Dietetic Intern and graduate student at Texas State University. I started grad school in Fall 2023 with the goal of earning a MS in Human Nutrition to fulfill the requirements to become a Registered Dietitian. I serve as a Board Member on the Evelyn Davies Foundation, a foundation that provides grants to schools and non-profit organizations for science and engineering scholarships, addiction recovery scholarships, healthcare and arts for underserved communities, and community programs such as Meals on Wheels and local food banks. I am also on the board of the Diamond M Foundation, which provides scholarships in West Texas and has an art collection housed in a dedicated wing in the Museum of Texas Tech. I was a Graduate Research Assistant for the NUEVA project, a multi-functional app and website developed for older adults that participate in meal delivery programs. My previous career was focused on sales, both B2B and face-to-face retail sales, customer service, and order management.
